Greek Chicken

Ingredients:

  • 850g Diced Chicken

  • 2 tbsp Olive oil

  • 2 tbsp Oregano

  • 1 tsp Smoked paprika

  • 1 tsp Chopped up dried parsley

  • 1 tsp Chopped up dried or powder coriander

  • 1 tsp Chopped up finely dried Rosemary

  • 1 tsp Chopped up dried Thyme

  • 1 tsp Lemon zest and 2tsp Lemon Juice

  • 1/2 tsp Cayenne peppers

  • 1 tsp Salt

  • 4 garlic cloves crushed

  • 1 small red onion chopped finely

  • 150g quark

  • Season with black pepper

Method:

1) Dice up the chicken and put it into a zip lock bag

2) Mix all the other ingredients in a bowel

3) Pour marinade over the chicken and let it sit for 3 -5 hours but overnight for more flavour

4) Put the chicken on skewers to cook on the BBQ for 15 minutes. Serve with pitta breads, tzatziki, greek salad and hummus.
