Spring Pea Asparagus Salad

Salad Ingredients

400g asparagus 
200g or peas 
1 red onion 
250g of chopped cherry tomoates 
50g Pine nuts
200g Feta 
10g Mint

Lemon Dressing Ingredients

2TBSP of olive oil 
1 TBSP and 1tsp of red wine vinegar 
1 garlic cloves crushed 
Zest and juice of half a lemon 
1 tsp of soya sauce 
Little bit of salt and pepper 

Method 

1. Cut off the tips of the asparagus and cook in boiling water for 3 minutes. 
2. Cook the peas in boiling water for 3 minutes 
3. Add some olive oil to a pan and grill the asparagus until they are nice a charred. Whilst they are cooking season with a good pinch of salt and pepper 
4. Put the veg in a dish and let cool
5. Whilst it’s cooling toast the pine nuts for a few minutes and add to dish 
6. Cut up the cherry tomatoes and red onion and add to dish 
7. Crumble feta on top 
8. Add the chopped up mint 
9. Add a little salt and pepper on top (I don’t go too crazy with this as added some whilst cooking and depending on people salty preference I don’t want to go too crazy)
10. Mix all the dressing ingredients together and give it a good shake. If planning on eating it all in one go I would add the dressing to the salad just before serving, if you want it more as meal prep then keep the dressing to the side so the salad stays fresh longer.
